Loved for its pungent and spicy character, its brilliant pairing with pork or lamb; its affinity for pasta, potatoes, polenta, and egg dishes; or solo, sauteed simply in garlic and olive oil. Cooked properly, these bitter greens are rendered sweet and delectable. Join us for a special class hosted by Julia della Croce, one of America’s experts on Italian cuisine. Using rapini in its prime season from the historic Andy Boy growers, Julia will guide us through a menu carefully curated to showcase this season’s arguably most versatile produce. Julia will demonstrate each dish in the open kitchen before it is served to you to enjoy. As always, there will be wine to sip and class will be complete with menus, adapted recipes, and wine tasting notes to take home. Menu
